My question is: why not “do you know where is the museum?”? Why do that inversion subject-verb in the original sentence despite the presence of the auxiliary do?

The inversion for the question is ‘do you know…’ Despite containing the word ‘where’ a second inversion is not needed.

Let me tell you that there is a mistake concerning the second question of this exercise. In the recording, about the third answer the speaker says “Sorry, I’m in a hurry” and not “No, I am not minding”.

Yes, I did mind.
No, I am not minding.

By the way, shouldn’t the question be “… would you mind taking US A picture?”?

That answer would be okay, though it would be unusual. More likely would be,
"No thanks, I’m happy with this.’ or something similar.

No that would be incorrect. The indication would be that you were taking apicture of something else for (on behalf of) these people.

You could say ‘… taking a picture of us.’

It is possible that it would be correct in one particular context (where the speaker is indicating an instruction/direction given earlier) but the usual expected tense there would be the present tense:
No, we don’t need to call; let’s just go.

‘Yes, I haven’t’ is not correct. ‘No, I haven’t’ would be correct.

‘N, not quite’ is the only viable option from the choices. It means 'No, you are right, I have not completely finished it though I am very near to completing it."
