To me, “Go” here means to experience, Adm. It can refer either to “do” or to “be”. For example,

A: I don’t know what a father is like.
B: Well, it’s ‘learn as you go’. You will know it well enough when you have a kid.

(It’s like you “train” while doing the “job” of a father)
