“We’re thinking of visiting Milan shortly.” Right. Can I say “We think of visiting Milan shortly” too?

In conversational English, and for most modern practical purposes, no.

“We think of visiting Milan shortly” is possible in a more literary style. To me it feels like something from an old letter.
