We’re only here for a few days, so we’ll make the most of it. Can I say “We’re here just for a few days, so we make the most of it”? I’m almost sure that “just for a few days” is fine, while I’ve got a few doubts about using the present tense instead of the future (as in the original sentence).

Right, “We’re here just for a few days” is OK.

“… so we make the most of it” is unusual in that sentence, and I can’t right now think of a situation when you would want to use it.

Yes, in that sentence you can use “doubts about the use of the present tense”, and it means near enough the same.
