You can say ‘beyond my scope’ if you are referring to something that you can’t fathom, or if you want to refer to something that is not usually included in your ‘scope’ of work.
‘beyond my capabilities’ describes your inability to perform a task.
‘beyond my skill set’ sounds like a colloquial, yet inventive alternative.
Depending on the situation, I’d probably go for ‘I have no conception/clue/idea of/about sth.’ or 'I don’t know how to do sth."
And then there’s also a simple ‘It’s beyond me!’
