How often do you hear or use the phrase “to boil the ocean”? I heard it for the first time recently in connection with a start-up company that seemed to be trying to develop and launch too many products at the same time.

I have not heard that one.
I agree that a startup should stay focused on a single product. A startup has no income, only huge expenses. Developing multiple products increases the already high expenses, without getting any closer to actually bringing in revenue.

To boil the ocean or to drain the ocean means more or less ‘to try to do the impossible’. Expressions to this effect are locally used in the vernacular.
