I would like to know the ending of this quotation:
‘They lived happily ever after until death takes/ sets them apart.’
Which phrasal verb should be used in the end? takes apart or sets apart?

There is no specific end to that, but the phrase ‘happily ever after’ suggests that not even death could separate them, so if you are going to use something like ‘until death separated then’ then you should probably leave out ‘ever after’.
… and they lived happily ever after.
… and they lived happily together until death set them apart /took one away / separated them.
