In the sentence: ‘Despite the passage of time, Emma immediately recognized the boy but this didn’t recognized her, to Emma’s disappointment.’
Shall we write ‘the passage of time or the passing of time’? What is your opinion?

Both “the passage of time” and “the passing of time” are possible. I’d guess “passage” is a bit more common.
“but this didn’t recognized her” isn’t right. I assume you meant “but he didn’t recognize her”.

Yes, except again it should be “he didn’t recognize her”.
I think I would put a comma before “but” (and possibly delete the first comma in case of comma overload).
