I’ve read recently “the education of the mother” and this sounded strange to me because i was thinking that “the mother’s education” should fit better for english language.

I think this is a question of emphasis. If you say: The education of the mother, you are going on to speak about the ‘education’ and what particular type it is. The mother’s education refers more closely to how it affects the mother in particular.

The education of the mother/Educating the mother/The mother’s education finally allowed her to give her children the help they needed regarding homework, etc.
