The count of
This usually means the process of counting.

On the count of 3 we will begin the race.

The number of
This is the quantity.

The number of minutes in an hour is 60.

What is the full sentence?

There are other words that can be used in some sentences. “Number of” can be used in a large variety of sentences. The other words will only sound right in a few sentences.

I’d say NO.

We always say ‘the number of’ to indicate quantity as in 'The number of participants at the webinar was more than 100.’

Count (down) is used as in ‘4, 3, 2, 1 ….’

The number of visitors came to England increased in 2007. Anw I think that as Anglophile said, I think that I will just repeat it or use “The statistic of …” maybe?

This is correct. Don’t use other words like count, quantity, statistic, etc.

You can also say something like:
Tourism increased in England…

I doubt that “the statistic of” would work, but to help you we really need to see the whole sentence.
