“Mary loves eating melon. There are many different kinds, but she likes them all. She can get one every week at supermarket. I do not like it much. I do not taste of it”.
Please explain to me “taste of” in the above context.

I believe there is a typo in your last sentence. Possibly it was there on the original that you read.
That sentence should read something like:
I do not like the taste of it
or
I do not care for the taste of it.

I do not like the taste of it = I do not like the way it tastes.
Does that make sense to you now?

Actually, the context as follows:

A: “There’s someone called Mary at work who loves eating melon. There are a lot of different kinds, but she likes them all and she gets one every week at the supermarket. I don’t like it much. I don’t think it tastes of anything.”
B:“I like it sometimes”

Please give me your explanation if you don’t mind.

I don’t think it tastes of anything = It does not have any flavour (it is tasteless).
