It vs. That: "So, that’s it for to day"

Please tell me the difference btw “it” and “that” in:

So, that’s it for today.

Can I say:

So, it’s that for today.

Hi,

That’s it for today is the accepted expression and means that we have now finished. Your other expression: It’s that for today doesn’t make sense.
