Is that wrong? (Not only do basic cooking techniques require great skill...)

Just read a small story about French Cuisine, but I can’t understand the following sentence,

“Not only do basic cooking techniques require great skill, but [color=blue]an they also demand a deep understanding of the ingredients themselves.”

Is the “an” there right?? How to understand this “an” ? thanks a lot!

The word ‘an’ is a typo.

I would guess that the author originally wrote this:
Not only do basic cooking techniques require great skill, but also an understanding of the ingredients themselves.

Then the author probably decided to edit the sentence, and the word ‘an’ was inadvertently left in the sentence. That would be a pretty typical sort of “cut and paste” error.
