‘Id est’ is not usually written in full these days. If for some reason you wished to use it, you would punctuate it following the general rules for punctuating a sentence.
There are various styles of writing the contracted standard form in modern English. You may see:
i.e.
ie.
ie:
ie,
As long as you are consistent regarding the way you punctuate it, and as long as you follow any necessary editing style, then it’s not something to be too concerned about.
As it’s derived from Latin, no one knows how to pronounce it. I now live in Germany, where Latin is pronounced quite differently from the Latin I learned in England.

Yes, Madam BN. I am sure you will pronounce it better than me. So even if you don’t know and somebody asks you to do it by guessing, how would you? I just want to pronunce it as you even if it’s incorrect.

The few times I’ve ever heard “id est” spoken, I think it was exactly as spelled: “id” to rhyme with “bid”, and “est” to rhyme with “best”. I don’t know whether that pronunciation is approved by Latin scholars, or is just a guess.
(You realise, of course, that “i.e.” is not normally pronounced as “id est”, but as the names of the letters “i”, “e”, to rhyme with “why me”.)

Just to be clear, the correct pronunciation of “i.e.” (in English) is “i”, “e”, as in the names of the letters. “id est” is almost never spoken (in English).
