The flow chart presents the steps of producing cheese. Overall, there are two way of cheese making however, they both have the same stages after coagulation stage to the end of the process at ripening stage.
According to the chart, nowadays cheese making requires raw milk to be pasteurizated first and then come to standardization and filtration stages before go into coagulation while traditional ways does not require these steps and raw milk will be put right into coagulation step. In coagulation step, fermenting microorganisms will be added to the mixture with rennet – a type of enzyme. The mixture will then become curds and whey and these things will be cutted before sturring and cooking.
After being cooked they will be put into a filter where whey will be removed and the remaining curds will be milled. In the milling stage, salt will be added to it and this thing can be use as cottage and cream cheese, which is called fresh cheese or will then continue to be putted into mold and be pressed after that to drain the additional whey. The cheese after that will be ripened for a certain of time and then become ripened cheese, thereby, completing the process.
