Fish vs. Fishes

Hello, I wrote these comments for one of my friends. Are they correct?

First-fruits: Earliest fruits of the season; First results.

I think fruit is like the word fish!
When you talk about one kind of fish, for example one hundred eels, you may say: Those eels are very dangerous fish.
But when you are talking about many kinds of fish in a group, or something like a group, you may say: Hey, look at those fishes!

I would think that basically fish is generic whereas a fish or fishes are individual and the the fish(es) is specific.

The plural of ‘fruit’ is most often ‘fruit’, but sometimes ‘fruits’.
