What’s the difference between these two usages ? Could you provide some real worlds examples?

There is no significant difference in meaning/usage.
during - within this period
over - in this time period

During the past few years I have been working abroad.
Over the past few years I have worked abroad.

I have made a lot of money during the last few years.
I have made a lot of money over the last few years.
