Yes, that’s the kind of structure. It is a convention when changing direct to indirect speech to ‘describe’ periods of time rather than using the same time expression used in direct speech. This would then read: She said that she had gone to the mall the day before.

I wonder if I could keep the simple past in reported speech. I mean, the people would see that OK or it would be weird?
If you were reporting what Mary said on the same day that she said it, the simplest way would be:
“She said she went to the mall yesterday.”
