I prefer this version with only one comma after ‘600 species’.

Well, the answer is that in English there are no hard rules when it comes to using commas.

I, personally, prefer option 2 for the first sentence. For the second sentence, I prefer option 2 again but with the small variation of adding oxford comma after ‘kind’. And for the last sentence, I feel second option is correct.
The following ones appear all right to me.

(4) We, Myanmar people, are simple, honest, kind and friendly.
