‘Having said that’ could sound, “In the circumstances”…
4) ‘You will receive a briefing session’ –why so winding? “You’ll get instructed” would be better to me.
6-7) That ‘environment/atmosphere … similar to having a cat at home’ part sounds a bit obscure to me.
‘…atmosphere as cosy as you’d have at home cuddling your pet cat’ was the indended meaning?
Then again, if it’s a kind of instruction for a potential volunteer, it should sound as such: brief and comprehensible.

At the cafe, we try to create an environment similar to that of having a cat at home.
Still I’m not sure about that ‘having a cat at home’ phrase. For some, who are not so fond of cats, it could be associated with messy, noisy creatures, leaving their hairs all over the place. In real life I’d advise you against promoting your café that way.
For the sake of language, I would say, “…a home-like atmosphere, filled with comfort and a happy cat purring” or something like that, for you to visualize it.
I have raised the fact that this wouldn’t happen in Western society previously.Animals would be banned from such establishments because of the health risks involved. Much as I love cats (and I do), I think most people would avoid a cafe with cats. They do have a habit of getting cat hair - and themselves - everywhere.
