It’s an adjective.
She’s American.
She’s anemic.
She’s vegetarian.
But can I say “She’s a vegetarian” Would it make a difference?
Only in that vegetarian would no longer be an adjective, but a noun.

I think these are almost the same meaning, but we usually use “a” more “vegetarian”
