However, to me, “Have you ever climbed a mountain” suggests that you want to know whether the person has ever climbed a mountain all the way to the top. In other words, it seems to ask about a complete climb.

Your second sentence (“Have you ever tried mountain climbing?”) refers more to the activity in general, and does not necessarily suggest that you want to know whether the person has ever completed a climb to the top of a mountain.
