A: What did you have for lunch?

Which is correct, the plural or the singular?

eggplant - always singular
green pepper - often depends on the variety of pepper and how it was/they were prepared for cooking.
potato - again depends on the preparation… new potatoes, mashed potato, baked potato, boiled potatoes, sauteed potatoes,etc.
Oh, boy! I’d have to go abroad to figure this out!
