The noun relating to the individual pieces of writing is poem.
The noun relating to the whole art form is ‘poetry’ and it is uncountable.

2a I do not like these poems.

Since it refers to building/masonry, I think ‘stone’ should be used as a non count noun, and not be pluralized.

It’s not clear without context whether it refers to masonry or not, so there is a case for allowing:
Our house is built (out) of stones.
Our house is built (using) stones.

  • Though it is not as common as speaking about the material, which would require ‘stone’.
