And his total experience as a Head Coach of an adult team is 3 years, coaching second division Mito Hollyhock, and third division SC Sagamihara?”

Would it be better to replace "The majority of his time’ with “Most of his time”?

Not really. “The majority”, meaning more than half, is a very common phrase.

Most of his time as a coach has been devoted to coaching youth and university teams, such as head coach of the U18 team of third division club Matsumoto Yamaga and assistant coach for other teams. And his total experience as a head coach of an adult team is 3 years, during which he coached the second division team Mito Hollyhock and the third division team SC Sagamihara.
