As it stands your sentence is a mixture of two constructions and as a result it isn’t correct. You can either say: I should stop talking or: I should be stopping talking.

Is it a good sentence structure to have two consecutive gerunds? This is where i got confused, even though it sounded correct to me.

Yes I agree. Ihe sentence I should be stopping talking sounds horrible! I was merely showing that you had a mixture of two structures. Incidentally they are not both gerunds. The first one stopping is part of the conditional continuous and the second one talking is the gerund.
