Is it possible to say “How do you like Nick?”
If so, what’d be the meaning?

That means ‘What do you think about Nick?’ –
‘Do you like Nick?’ is a closed question which really only requires a yes or no answer
but
‘How do you like Nick?’ is more open and encourages you to explain your feelings about Nick in more detail.
