‘Including the baby’ sounds fine. I feel if you use ©, you need to omit ‘the’ and simply say: ‘baby included’. The second sentence you give sounds a bit odd.

May I know why we must omit ‘the’ before ‘baby’? What is the rule to be applied in this case since that ‘baby’ is a noun.

It is merely a suggestion because it suggests that ‘baby’ is part of the group and isn’t any particular or named baby.
