A pronoun replaces a noun, while an adjective appears with (usually right before) a noun, so if the noun is there too, then it is an adjective, but if there is no noun with it, then it is a pronoun:
I’ll take these socks.
I’ll take these.
What is this?
This hat is too small.
Thank you so much sir.
Now, I understand!
